A series motor has [in theory ] infinite torque at zero revs and will rev to infinity if not under load.[ it will of course not reach infinity as it has bearing friction and a little fan inside to slow it, but it can go at an alarming speed and damage itself.]
A shunt wound motor will have a set running speed,[usually 1500 or 3000 rpm] and will go to that speed without going above it even with no load and has high torque at high revs, at which point you can apply the load.
